5x5 Series: Day 5... Finally!
Our last entry for this series is great if you're looking for dinner for 2 or fun finger food for a summer party.
Teriyaki Chicken Tenders
Teriyaki Chicken Tenders
Ingredients:
- 2 boneless skinless chicken tenders, cut into bite sized cubes
- Teriyaki sauce
- Vegetables: red bell peppers, zucchini, onions cut into cubes
- Bamboo skewers
Directions:
- Cut chicken and vegetables into bit sized cubes.
- Slide chicken and vegetables onto bamboo skewers, alternating.
- Brush teriyaki sauce over skewers.
- Grill on medium heat for 10-15 minutes or until chicken is cooked through.
- Enjoy!

On those cold days when you're stuck inside studying, try this easy recipe for chicken soup.

- 2 red potatoes, cut into cubes
- 2 carrots, sliced
- 1 lb boneless skinless chicken breasts, cut into cubes
- 1-8 oz can chicken broth
- 1/2 head of cauliflower
Directions
- Bring 1 cup of water and 1 can of chicken broth to boil in medium size pot. Lower heat. Add potatos and carrots, and cover pot. Cook until potatoes and carrots are soft.
- Add chicken and cauliflower. Cover pot and cook for 5 minutes or until chicken is cooked thouroughly.
- Add cooked noodles if desired.
- Enjoy!

Easy, breezy! Try this recipe for California Style Lemon Pepper Chicken.

- 1/4 cup flour
- 1 1/2 teaspoon McCormick California Style Lemon Pepper with Garlic & Onion
- 1/4 teaspoon salt
- 1 pound thinly sliced boneless skinless chicken breasts
- 2 tablespoons butter
Directions:
- Mix flour, season and salt in shallow dish. Moisten chicken lightly with water. Coat chicken lightly with flour mixture.
- Melt butter in large nonstick skillet on medium heat. Add half of the chicken.
- Cook 5 minutes or until lightly browned and cooked through, turning once. Reheat with remaining chicken.
- Enjoy!

5x5 Series: Day 2!
Round 2! Today we're working on a pizza that's great to share but maybe to delicious to do so :)

Ingredients:
- 1 lbs boneless skinless chicken breast halves
- 1 cup BBQ sauce
- 1 lb fresh pizza dough or 1 prepared pizza crust
- 2 cups shredded mozzarella or monterey jack cheese
- 1/4 cup sliced red onions
Directions:
- Grill chicken over medium heat 5-7 minutes per side or until chicken is cooked through. Cut into bite size cubes.
- Stretch or roll out doubh on floured baking sheet to a 12-14 inch round, about 1/4-inch thick.
- Brush 1 table spoon olive oil over crust and grill crust 1-2 minutes or until grill marks appear. Carefull flip crust using tongs or spatula.
- Spread BBQ sauce on crust. Layer with 1/2 of the cheese, chicken, then remaining cheese and onions.
- Cover pizza and grill 3-4 minutes longer or until cheese is melted and crust is browned.
- Enjoy!

As college students, we know that time isn't the only factor when it comes to making a meal. After tuition and books, most of us don't have extra cash to spend on lots of fresh ingredients. Over the next 5 days we're going to post 5 easy recipies, each containing 5 ingredients or less! The main ingredient: boneless skinless chicken breasts. These can be found in 5-10 lb bags in the freezer section at your local grocer. Boneless skinless chicken breasts are a delicious (and healthy) addition to any meal that won't break the bank!

DAY 1: Baked Taco Chicken Fingers
Ingredients:
- 1 pack of taco seasoning mix
- 2 tablespoons flour
- 1/4 cup cornmeal
- 2 lbs boneless skinless chicken breasts, cut into 1/2 inch strips
Directions:
- Preheat oven to 450 degrees F. Line baking sheet with foil and spray with non-stick cooking spray.
- Mix taco seasoning, flour and cornmeal in shallow dish or plastic bag.
- Moisten chicken with water and coat each chicken finger with seasoning mix.
- Place chicken strips 1 inch apart on baking sheet and spray with cooking spray.
- Bake for 15 minutes or until chicken is cooked through.
- Enjoy!

Baked Egg Dish

Ingredients:
- 8 Eggs
- 2 c Milk
- 3/4 lb Velveeta cheese, cut in 1/2" cubes
- 8 Slices buttered bread, cut In 1/2" cubes
- 2 c Ham, cut in 1/2" cubes
- Salt and/or pepper to taste
Instructions:
- Beat eggs; add milk and remaining ingredients.
- Pour into 9 x 13" buttered pan.
- Cover; refrigerate overnight.
- In the morning,bake,uncovered, @ 350 degrees about 45 minutes.
- It should bubble and be golden brown.
- Serves 8 to 10.
