5x5 Series: Day 2!

Round 2! Today we're working on a pizza that's great to share but maybe to delicious to do so :)

Ingredients:

  • 1 lbs boneless skinless chicken breast halves
  • 1 cup BBQ sauce
  • 1 lb fresh pizza dough or 1 prepared pizza crust
  • 2 cups shredded mozzarella or monterey jack cheese
  • 1/4 cup sliced red onions


Directions:

  1. Grill chicken over medium heat 5-7 minutes per side or until chicken is cooked through. Cut into bite size cubes.
  2. Stretch or roll out doubh on floured baking sheet to a 12-14 inch round, about 1/4-inch thick.
  3. Brush 1 table spoon olive oil over crust and grill crust 1-2 minutes or until grill marks appear. Carefull flip crust using tongs or spatula.
  4. Spread BBQ sauce on crust. Layer with 1/2 of the cheese, chicken, then remaining cheese and onions.
  5. Cover pizza and grill 3-4 minutes longer or until cheese is melted and crust is browned.
  6. Enjoy!
