5x5 Series: Day 5... Finally!

Our last entry for this series is great if you're looking for dinner for 2 or fun finger food for a summer party.

Teriyaki Chicken Tenders

Ingredients:


  1. 2 boneless skinless chicken tenders, cut into bite sized cubes
  2. Teriyaki sauce
  3. Vegetables: red bell peppers, zucchini, onions cut into cubes
  4. Bamboo skewers
Directions:


  1. Cut chicken and vegetables into bit sized cubes.
  2. Slide chicken and vegetables onto bamboo skewers, alternating.
  3. Brush teriyaki sauce over skewers.
  4. Grill on medium heat for 10-15 minutes or until chicken is cooked through.
  5. Enjoy!

5x5 Series: Day 4

On those cold days when you're stuck inside studying, try this easy recipe for chicken soup.

Ingredients


  • 2 red potatoes, cut into cubes
  • 2 carrots, sliced
  • 1 lb boneless skinless chicken breasts, cut into cubes
  • 1-8 oz can chicken broth
  • 1/2 head of cauliflower


Directions


  1. Bring 1 cup of water and 1 can of chicken broth to boil in medium size pot. Lower heat. Add potatos and carrots, and cover pot. Cook until potatoes and carrots are soft.
  2. Add chicken and cauliflower. Cover pot and cook for 5 minutes or until chicken is cooked thouroughly.
  3. Add cooked noodles if desired.
  4. Enjoy!

5x5 Series: Day 3

Easy, breezy! Try this recipe for California Style Lemon Pepper Chicken.

Ingredients:

  • 1/4 cup flour
  • 1 1/2 teaspoon McCormick California Style Lemon Pepper with Garlic & Onion
  • 1/4 teaspoon salt
  • 1 pound thinly sliced boneless skinless chicken breasts
  • 2 tablespoons butter


Directions:

  1. Mix flour, season and salt in shallow dish. Moisten chicken lightly with water. Coat chicken lightly with flour mixture.
  2. Melt butter in large nonstick skillet on medium heat. Add half of the chicken. 
  3. Cook 5 minutes or until lightly browned and cooked through, turning once. Reheat with remaining chicken.
  4. Enjoy!

5x5 Series: Day 2!

Round 2! Today we're working on a pizza that's great to share but maybe to delicious to do so :)

Ingredients:

  • 1 lbs boneless skinless chicken breast halves
  • 1 cup BBQ sauce
  • 1 lb fresh pizza dough or 1 prepared pizza crust
  • 2 cups shredded mozzarella or monterey jack cheese
  • 1/4 cup sliced red onions


Directions:

  1. Grill chicken over medium heat 5-7 minutes per side or until chicken is cooked through. Cut into bite size cubes.
  2. Stretch or roll out doubh on floured baking sheet to a 12-14 inch round, about 1/4-inch thick.
  3. Brush 1 table spoon olive oil over crust and grill crust 1-2 minutes or until grill marks appear. Carefull flip crust using tongs or spatula.
  4. Spread BBQ sauce on crust. Layer with 1/2 of the cheese, chicken, then remaining cheese and onions.
  5. Cover pizza and grill 3-4 minutes longer or until cheese is melted and crust is browned.
  6. Enjoy!

5 x 5 Series: Day 1

As college students, we know that time isn't the only factor when it comes to making a meal. After tuition and books, most of us don't have extra cash to spend on lots of fresh ingredients. Over the next 5 days we're going to post 5 easy recipies, each containing 5 ingredients or less! The main ingredient: boneless skinless chicken breasts. These can be found in 5-10 lb bags in the freezer section at your local grocer. Boneless skinless chicken breasts are a delicious (and healthy) addition to any meal that won't break the bank!

DAY 1: Baked Taco Chicken Fingers


Ingredients:


  • 1 pack of taco seasoning mix

  • 2 tablespoons flour

  • 1/4 cup cornmeal

  • 2 lbs boneless skinless chicken breasts, cut into 1/2 inch strips

Directions:

  1. Preheat oven to 450 degrees F. Line baking sheet with foil and spray with non-stick cooking spray.

  2. Mix taco seasoning, flour and cornmeal in shallow dish or plastic bag.

  3. Moisten chicken with water and coat each chicken finger with seasoning mix.

  4. Place chicken strips 1 inch apart on baking sheet and spray with cooking spray.

  5. Bake for 15 minutes or until chicken is cooked through.

  6. Enjoy!

Baked Egg Dish

Ingredients:

  • 8 Eggs
  • 2 c Milk
  • 3/4 lb Velveeta cheese, cut in 1/2" cubes
  • 8 Slices buttered bread, cut In 1/2" cubes
  • 2 c Ham, cut in 1/2" cubes
  • Salt and/or pepper to taste


Instructions:

  1. Beat eggs; add milk and remaining ingredients.
  2. Pour into 9 x 13" buttered pan.
  3. Cover; refrigerate overnight.
  4. In the morning,bake,uncovered, @ 350 degrees about 45 minutes.
  5. It should bubble and be golden brown.
  6. Serves 8 to 10.

Chicken Quesadillas Recipe

Ingredients:
  • 12 oz. chicken breast, cooked
  • 2/3 c. cheese (your choice), shredded
  • 1/4 c. green onion, chopped (optional)
  • 8 (8") flour tortillas
  • 1 c. salsa (optional)
  • 1 c. sour cream (optional)
Instructions:
  1. Place 1 flour tortilla onto a microwaveable plate.
  2. Top tortilla with 1/4 each of the prepared chicken, shredded cheese, chopped green onion & salsa.
  3. Place second tortilla on top, place in microwave.
  4. Heat on high until cheese is melted.
  5. Repeat directions for the next 3 servings.
  6. Serve with sour cream. Makes four 8” Quesadillas.

Asparagus Soup Recipe

This recipe is easy to do and can be used as an appetizer or light lunch.

Ingredients:
  • 2 lb Asparagus cut diagonally
  • 1 Clove garlic, pressed
  • 2 tb Basil
  • 2 tb Tarragon
  • 1 c Cream Bouillion cube
  • 1 Vegetable, beef or chicken
  • 4 c Water
  • 3 tb Butter
  • 1 Red potato, chopped small
  • 4 Green onion, sliced thinly
  • 3 Leeks, sliced into 1" pieces
  • 1 tb Soy sauce
Instructions:
  1. Saute vegetables in butter for 5 minutes.
  2. Add water and bouillon cube; Simmer 5 minutes.
  3. Add remaining ingredients and simmer 10 minutes more.
  4. Serve.

Tips to start a meal

Here are some easy tips to remember when you first begin cooking meals in college.

Saving money is always the #1 priority for college students so things to keep in mind is to buy food in bulk and/or sharing some ingredients with friends so that a big meal can be shared with everyone.
The rules are:

1) You cook an evening meal for everyone involved

2) Whoever cooks cleans everything up, all plates, pots and kitchen sides

3) Set a minimum spend or some sort of agreement to make sure you all cook to a similar standard

4) The more people, the cheaper and less often you will have to cook

Essential cooking materials

As a college student, food is one of the most important things on your mind. Most of the time, you can either cook for yourself, go out to eat, or sponge off one of your friend's meal.

This useful blog will help ALL college students with tips, recipes, and dining restaurants that are nearby, inexpensive, and scrumptious.

We will start with a list of some handy utensils that will greatly ease any college student's mind.


Utensils:
  • Spatula
  • Wooden Spoon
  • Large Knife
  • Small Paring Knife
  • Large Wok (this can be used as an alternative to a frying pan)
  • Large hob pot
  • Large Frying Pan
  • Deep oven dish (preferably ceramic)
  • Shallow over tray
  • Tin opener
Other items to consider are:

  • Mini-Toaster Oven
